It looks like Verizon in your area is using 1900mhz. The 800mhz spectrum in
Texas is such a cluster (pardon my language). The areas are all sliced up
into tiny pieces and they are all owned by random different providers.

I can't quite tell where on this map Mart TX falls, however, it appears that
Verizon has no 800mhz licenses in your area. They do however have 1900mhz
licenses

Alltel on the other hand, actually has 800mhz spectrum in your area (if I am
looking at the map correctly)!
I am not sure if Alltel provides free roaming over on to Verizon as Verizon
does with Alltel, however, it would be worth giving it a shot! If you can
force your phone to 1900mhz mode it may pick up that new tower.

I looked at the 1st. link and on the A side I would be located in the
blue labeled AT&T. On the B side I would be in the bright yellow
labeled Alltel. On the second link I can't tell exactly where I am. On
my plan I have free roaming anywhere. Ever once in a while my phone goes
on roaming here at home.
How would I force my phone to 1900mhz? Can I mess up anything doing it?
Now you understand I don't know anything about this. I don't know the
1900, 800, CDMA etc. If you tell me how keep in mind I will need very
basic step by step instructions.

Forcing your phone to 1900mhz will not mess anything up as long as you set
it back to "auto select" when you are done. Changing your home SID is a bit
more adventurous, but could always be fixed by having your phone do and
over-the-air activation again.
Does *3001#12345# give you any kind of menu on your phone? I have never
used a 5185i so I do not know what the menu structure looks like.
Worst case, if you can't hit that Verizon tower for whatever reason you
could force your phone over on to ATT's analog gear and give that a shot.
Other options for you include getting an external antenna for your house or
some kind of booster system.
