I think a Nokia 6220 (GSM, available now) and 6225 (CDMA, still to be
released here) would suit what you're after.
Similar features to the 6310i/6385, plus MMS capability, colour imaging,
Java applications and built-in camera.
You could substitute the 6220 with earlier, also compatible GSM models, but
with slightly different features - 7210, 6610, 6100, 7250/7250i.
Note that the new 6230 (GSM) has a bunch of extra features, but uses a DKU-2
cable, while (I believe all of) the others mentioned use the DKU-5. No idea
what the difference is, or whether they're compatible.

I don't see why not, seeing as 3 have released the Nokia 7600, which is
GSM...

No, the Nokia 7600 is dual-mode - WCDMA (an implementation of 3G) plus GSM
900/1800, whereas the 6220 etc are GSM only. Hutchison's 3 sells the 7600
because it's made to accept 3G SIMs.
Most anecdotal evidence points to (most) 2.xG handsets not working with 3's
USIMs. There's reams of user experiences on forums around the traps on what
handsets do/don't, but the reports are pretty inconsistent.
