Technically, if its a 6310i it's bluetooth 1.1 compliant. Realistically, if
the firmware is before v5.50 you'll have a bugger getting it to work with
most things that aren't headsets (*#0000# to check firmware version).

I'm soon to be trying it out on a new BMW incar Media Interface, BMW have
told me that any phone used to pair with must be v1.1 specification, this
ensures that the phone book can be uploaded and calls can be made from the
Steering Wheel controls.
I am prepaired to buy another phone if my 6310i is not fully bluetooth v1.1
compliant, but I'm finding it very hard getting information on which
phone's are :-(
Can anyone recommend a phone that is considered to be 100% v1.1
specification compliant ?

I'd hazard a fairly confident guess that the 6310i will work with your
handsfree "media interface" for the voice calls, but I doubt it'll support
interfacing with the phone book. If you've already got the car and the phone
it won't hurt to try it though. It'll probably support voice dialling
directly with the phone though, but the downside is its using the phones'
voice tags rather than the kits' , so you only get 10 or so voice tags that
the phone supports.
I'm not sure about other phones that'll work ('cause I only have a 6310i
myself), but I think the Sony Ericsson T68i or P800 should work with it, as
I've seen that they'll support phonebook interfacing with things like the
Parrot Driveblue handsfree car kits. Bluetooth Motorola models should work
too. No nokias spring to mind though (which is a shame, 'cause I prefer the
nokias myself!).
You should at least be able to make calls with it though. Good luck trying.
