So my market has gone GSM now and I'm sitting here with my ugly 6340i
still, starting to look old. Now that GSM is here, can i just go to ebay
and find me a GSM phone i like and take the SIM card from the 6340i and
plugging it in the new phone?

Simple answer....Yes! It obviously won't allow you to use anything other
than GSM, but the phone will work. Make sure the phone has GSM 850 and 1900
and is unlocked.

6340i has GSM capability built in. It is a GAIT phone.

Yes, it should, provided:
1. The phone you get has no subsidy lock, or at worst is subsidy locked
to the same mcc/mnc used by your GAIT Sim card.
2. The phone covers the frequency used by Cingular in your location
(best would be a phone that has 850MHz and 1900Mhz capability).
