Hi, I've just purchased an SE P800, and was wondering if it would be
able to use the wireless network's internet connection to access
internet/email on the phone?
Is there a way to get the phone to auto-detect it, or do I have to
enter Internet details manually? It asks for IP addresses, and
usernames and passwords...?!

You can use:
1) GPRS or CSD (dialup) access to receive emails or browse webpages, you can
do it wherever you are,
or
2) you can use bluetooth connection to your computer that has Internet
connection to get acces to the Net
you CANNOT
3) use WiFi (802.11b) or wireless LAN with your P800, the phone doesn't
understand WiFi

On my P800 i connect to the internet via bluetooth and the opera browser.
Opera tries to connect via a computer first before using GPRS. For email
it doesnt work like this, but there you can use the sync utility to get
emails
to ur mobile.
