undeleting SMSs and/or phone numbers off a GSM SIM?

I have a SIM on the Fido GSM network in Canada.  Are there any
phones/computer tools I can use to undelete an SMS or a phone
directory entry?  Does it depend on the make/model of SIM, or does GSM
overwrite the data with null bytes, or something, rather than just
flagging it as deleted info?

You can't. The entries are overwritten with null bytes.
