Can I block my cell number from showing up on Caller ID the way I can
with my land based phone?  If so, how do I do it.

That's a phone-dependent option. Check your phone's manual for how to do so.

Is it really?  On Verizon and Cingular dialing *67 followed by the
number does it, which I think is the same as my landline.

You might try adding *67 in front of the number you are dialing, or #31#.
I've always found *67 to work on US phones but I think #31# might be
the GSM standard prefix for doing the same thing.

Usually, yes.

On Sprint and Verizon, I would dial *67 before a call to block caller
id for that call only, just like on most landlines. I also had the
option of calling and turning on permanent caller-id block, in which
case I could dial *82 to let CID through for a certain call.

My T-Mo phones have "hide caller id/show caller id" as a menu option,
but T-Mo also has a * code to do it...
