2 questions

Just unlocked my Orange phone and put in an o2 payg sim.  Received a txt
from O2 to update my data settings. Does this mean that my Orange ones are
wiped/overwritten or are they held on the SIM and not in the phone ?

is the search list of available networks held in the SIMs or on the phone.
Just wondering what will happen when I go abroad, will I still be able to
swap the sims without problem.

No, it means that your o2 account has been provisioned fro GPRS. Actual
settings are stored on the handset - these will have to be manually
changed.

There is no such list. When you scan for network the phone does just
that, it scans.

If the handset is unlocked then you can swap SIMs to your hearts
content.

thats just a list of known networks when the phones firmware was
written. I have an older Nokia thats says BT Cellent but it actually
picks up O2. This was because when the firmware was wriiten they put
BT Cellnet as the name to display when it picked up a signal from the
network using 234 10 which was BT Cellnet and is now O2. Youre list is
just the same but Moto have decided to display it and it will actually
pickup any signal it has been designed to work on depending on whether
its dual band, triband etc.

These are the preferred networks your phone will register with if it has a
choice.

Often set by your provider as they have some agreement in place with them,
or are a partner. It's not always the cheapest option though.

This is the list of preferred networks. The phone will always try to
search out one of these networks in preference to any other when you are
roaming.
