OK, had a touch of guilt at being so lazy and not doing some research -
I guess the phone I'm interested in is the Nokia E70 - can anyone shed
any light on how workable the SIP VoIP functionality over WLAN is and
also whether any UK networks offer it as a standard phone - I have found
some providers who advertise it (for example) as an 'Orange E70' but I
presume they just throw in a PAYG SIM? Could the E70 be put on a monthly
contract with the likes of Orange, Voda or T-Mobile?

The Nokia N80 has SIP and Skype are working on a version for it.

Skype is not SIP protocol for VoIP .... so this may not work or will be a
VERY VERY long time.
