According to the legal eagles over in uk.legal, this business about having
to tell people you're recording your phone conversations with them is an
urban myth.

So how do I stop my Sony Ericsson K800i from beeping periodically when I'm
recording a conversation?

Buy an old Siemens SL45 which doesn't bleep,
takes a 32mb SD card which will record up to an hour,
so just stick a bigger one in.
