This is something I don't understand.  I am aware that java is a single
language that can be implemented and function on multiple platforms, which
leads me to ask why every java game does not work on every phone, after all,
as I said, java is java....

Yes Java is Java, but the environment that the compiled Java
application/game has to run on may be different, depending on the
manufacturer and model of phone. e.g. screen size, amount of memory,
sound, keypad, etc. Nokia series 30, 40, 60, Samsung, Motorola, etc.
