My daughter has the LG VX-8300. Today she received a Motorola H700
headset.
The headset works well but we were surprised that the voice navigation
commands came through the speaker rather than the bluetooth headset?
Is this normal? Might there be a command we overlooked?

Are you sure the speakerphone wasn't turned on?

To answer directly - no. She was placing and receiving calls via the
headset beforehand. It is possible that we may have tapped that key
inadvertently.
Can I properly assume they should normally feed through the headset?

Honestly not sure. I've used the VZNavigator a couple of times, but not in
conjunction with my BT headset so I don't know how they work together.
Hopefully someone with experience will jump in here.

Jim, I have the 8300 and a Bluetooth. Navigator audio prompts will NOT come
through the headset. I also don't like the fact that you cannot use the
phone and navigate at the same time. If a call comes through while
navigating, Navigator goes to sleep until the call is ended then comes back.

That's my experience too; VZ Navigator always speaks through the
phone's stereo speakers, even when Bluetooth-connected to a Motorola
H700 mono headphone, or a Motorola HT820 stereo headphone. Upgrading
the 8300 firmware to T83VZV04 doesn't help.
