Is there a site that regularly updates coverage maps or lets you
know where the newest towers have gone up?

Too bad  It would be cool if VZW provided this info on their site.

Gary,
We have some of the new Verizon cell sites listed at:

http://www.mountainwireless.com/vzwnews.htm

We get them from the FCC who only gets involved when the new sites cover
'newly-served' area, or crosses Cellular Market boundaries.  Many new
sites are not reported to the FCC.

We review the FCC records for CO, NM, AZ, UT, MT, WY and ID.  The only
new FCC-reported sites this year were in Colorado, and there were over a
dozen, mostly rural.  We suspect, and hope, that there were more that
did not require a modification of their FCC license.

We also have the older Verizon coverage maps at:

http://www.mountainwireless.com/maps.htm

For some areas, the maps are more recent on Verizon's web site.
